Once we have learned what kind and how much fat we need, we should take a closer look at the question of protein, because the liver needs a supply of good protein for maximum efficiency. Pulses, that is, peas, beans and lentils, as well as milk, are excellent sources of protein. Milk protein is the best type for the liver. Not only the sick person benefits from protein taken in the form of sour milk, yogurt, or cottage cheese and curds, but anyone who is healthy too.
If a patient suffering from a liver disorder wishes to eat some meat protein, the meat should be grilled, never fried. Avoid fatty cuts or meat that was cooked in its own fat. Very lean, muscular meat, preferably veal or beef, is the best for the patient who thinks he cannot do without it. Since pork is the most harmful of all meats, it should be eliminated from the diet. Among the divine laws given to the Israelites was one forbidding them to eat pork and, as it so happened, this abstinence proved to be in the interest of their health.
